I love hummus. I used to buy boatloads of it until I finally started making my own - and it's really, seriously better than the stuff from the store. I love having control over the flavors! My personal favorites are turmeric (for health benefits - turmeric is a super-powerful anti-inflammatory, and inflammation is at the base of all disease) and dill for flavor. DILL! There's not enough dill in our lives.
You will need:
- 1 Lemon, juiced
- 1/4 cup Organic Tahini
- 1 can Organic Chickpeas
- 2 tablespoons Olive Oil
- Salt to taste
- Optional: Garlic (2 cloves; roasted is even better), Cumin (1 tsp), Turmeric (1 tsp), Pepper (to taste - it makes the turmeric available for absorption), Dill, Cilantro, Basil, etc
Put the lemon juice and tahini in a blender/food processor for a full minute. Apparently blending the tahini for extra time is the secret to amazing, creamy hummus.
Add the chickpeas, salt, olive oil, and any other spices/herbs. Usually, traditional hummus has garlic and cumin, but it makes it slightly spicier. If you have a child with a sensitive palate, like I do, try without.
Blend until smooth. You might want to add a few tablespoons of cold water if it's too thick.
Enjoy with corn chips, pita chips, cucumbers, sliced bell peppers, jicama, carrots, on toast, in wraps...
